Shrimp fajitas are sizzling hot with all of the smoky, bold flavors of wonderfully seasoned shrimp, bell peppers, and onions. Here’s everything you’ll need to make them:

  • Shrimp: We like to use small to medium-sized shrimp for this recipe, so they are easier to tuck inside the tortillas with all of the other ingredients.
  • Lime juice: Adds bright flavor and helps the spices adhere to the shrimp.
  • Olive oil: For cooking the shrimp and vegetables.
  • Bell peppers: Use any color of bell pepper to provide a crisp bite, texture and color. Keep in mind, red peppers are the sweetest, yellow and orange peppers are mild, and green peppers can be somewhat bitter.
  • Onion: Any variety of onion will taste great and add a nice depth of flavor to the fajitas.
  • Spices: The fajita seasoning is a delicious mix of chili powder, cumin, onion powder, garlic powder, paprika, dried oregano, and salt.

Shrimp fajitas cook up quick and easy! Here’s the simple method:

  1. Mix the spices: Whisk the fajita seasoning in a small bowl. 
  2. Season the shrimp: To a large bowl, add the shrimp, lime juice, oil, and about ¾ of the fajita seasoning; toss or stir to combine. 
  1. Cook the shrimp & veggies: Heat a large pan over medium-high heat. Add the shrimp to the pan and cook for 1 minute on each side or until cooked through. Remove from the pan and set aside. To the same pan, add a light drizzle of oil and the bell peppers and onions and cook for about 2-3 minutes, just until they begin to soften. Sprinkle with the remaining fajita seasoning. Push the peppers to one side and return the shrimp to the pan.
  1. Assemble the fajitas: Serve with your fresh tortilla, guacamole or avocado, sour cream or salsa, grated cheese, and freshly sliced lime.
